His passion for fusion cuisine combines the flavours of Japan and China with those of Europe.
After rising through the ranks in various restaurants in his native Japan, this young prodigy took off to Australia to work in a prestigious 5 star hotel. It was there he earned his spurs and discovered western ways of cooking.

2004 found him in Kuala Lumpur,where worked as sous-chef and opened a new 'Japanese-fusion' restaurant. In 2005, he participated in the 'KL International Gourmet Festival' in Kuala Lumpur and beat 23 master chefs to the prize for the most creative menu! In 2006 he was chosen to represent Japan in a campaign in Kuwait to promote Japanese cuisine.

The same year, he tackled a new challenge and moved to Dubai where he became an expert on sushi at Jumeirah Emirates Towers.

He decided to join the team at Heritage Le Telfair in Mauritius to take charge of the Japanese-Asian restaurant, the Gin'ja, where he delights customers with the full extent of his talent in fusion cuisine.

He offers guests an inspired cuisine in which creativity always respects the original flavours of the products. Around the Robota Yaki, fish, shellfish and seafood are prepared on skewers and grilled or served in the Japanese manner, as sashimi or sushi ... a real treat for the taste buds.

A voyager through the world of flavours, the Executive Chef Enrico Rodati arrived at Heritage Le Telfair in May 2007. His cooking tells a story as he combines Mediterranean inspiration with Italian tradition and oriental refinement.

His passion led him from Rome to Seoul, from Singapore to Japan and finally to Mauritius where he discovered other cultures and a unique harmony.

On the shores of the China Sea in Singapore, he learned the delights of Asia. Thai,Chinese and Indian cuisine revealing subtle compositions. “It's a paradise, it's dazzling.
